Food Save Basel-Stadt

THE INITIAL SITUATION

Implementation of the Basel policy package “Sustainable Nutrition Action Package Basel-Stadt 2018-2021”

The city of Basel’s policy package gives high priority to the prevention of food waste in gastronomy and other areas of the food economy. As a practice partner of the city of Basel, our task is to recruit, support, and advise a community of Basel restaurateurs to enable waste reduction. The project aims to achieve measurable reductions for participating establishments while simultaneously creating a flagship for the city and cantonal administration to address the topic with urban gastronomy on a long-term basis.

OUR SOLUTION APPROACH

Community, measurements, measures, and network event

With the city and cantonal administration behind us, 30 establishments were recruited through the networks of Foodways and United Against Waste. This was achieved not least through the partnership with the local branch of GastroSuisse. The project now proceeds in the following steps: The services provided by Foodways include:

  • Concept and process development, partner and customer acquisition
  • Detailed measurements and consulting for gastronomy establishments across all sectors (core element from our Food Save Management)
  • Process design and management, project management including COVID-19 crisis management (project halt, replanning and restart)
