THE STARTING POINT
The BEKB SME Funding Foundation finances Foodways workshops
SMEs are the backbone of the Swiss economy: They secure jobs, drive innovation, and strengthen regional value creation. At the same time, many gastronomy businesses face increasing challenges. Rising costs, skilled labor shortages, changing guest needs, and the effects of the climate crisis demand greater efficiency – while maintaining quality.
Especially in such times, the particular strength of our gastronomy businesses becomes apparent: their adaptability, their creativity, and their willingness to operate more resource-efficiently. This is precisely where Food Save Management comes in – a practical, data-based program for reducing food waste in gastronomy.
THE PROJECT
Food Save Management: Measure, understand, and reduce food waste
As part of the SME Impulse Program, Foodways offers gastronomy businesses a practical workshop that shows how food waste can be made visible and effectively reduced. After a brief consultation with our expert Alexander Pabst, the workshop can be self-financed or funded through the BEKB SME Funding Foundation and will be carried out within three months if approved.
For preparation, the business can submit existing data. In the 2–3-hour on-site workshop, participants receive an overview of the current state of food waste in Swiss gastronomy, including benchmarks and best practices. Their own current situation is analyzed, suitable measures are identified, and the connection to Swisstainable is explained. The result is a clear to-do list for the next steps.
The outcome: Know-how transfer, an assessment of the potential within one’s own business, and a concrete roadmap for implementation.
