INITIAL SITUATION AND OBJECTIVES

How can a greater awareness of resource use be fostered within the meat industry?

The meat industry is a key sector of the Swiss economy in terms of its use of natural resources. In recent years, meat consumption patterns have shifted significantly: while premium cuts have become increasingly popular among consumers, less sought-after cuts are appearing on dinner plates less and less frequently. These less popular cuts, however, account for a large proportion of the meat ready for sale. There are numerous innovative approaches with great potential for marketing these parts. Through a multi-year sustainability program, Proviande aims to bring holistic and innovative meat processing back to the forefront of the industry.

THE PROJECT

Support Measures for Foodservice Professionals and Meat Industry Experts

In collaboration with Proviande, Foodways has designed and manages the multi-year program “Savoir-Faire,” which aims to provide future-oriented support for the meat value chain and actively shape the discourse surrounding the holistic utilization of meat. Specifically, the Savoir-Faire program supports and empowers meat industry experts and foodservice professionals to harness the potential of marketing the entire animal—from developing innovative product concepts to communicating with customers. To encourage the industry to adopt a greater awareness of resource use, Foodways has provided the following support:

  • Communication of the developed measures
  • Design of a multi-year sustainability program through a participatory process involving 10 industry partners
  • Collaborative project implementation with the client
  • Development and execution of a multi-stage catalog of measures
  • Engagement of external partners to contribute to the project
